Ingredients
2 tsp sesame oil or avocado oil
2 cloves garlic, minced
1 tbsp freshly grated ginger
1 tbsp coconut aminos
1 tbsp white miso paste (added last)
3 cups homemade chicken bone broth or veggie broth
2 tsp apple cider vinegar (gut-supportive)
2 Tbsp Coconut aminos
1Tbsp Clean Monday meals Ramen seasoning
2 tsp Clean Monday meals Chicken Bullion
Add-ins:
1/2 cup sliced shiitake mushrooms (gut and immune support)
Nori Squares
1/2 cup chopped zucchini or spiralized carrots
1 cup chopped bok choy or baby spinach
2 rice ramen cakes (Lotus Foods brand recommended)
1/2 cup shredded cooked chicken breast and/or soft-boiled egg (1 per serving)
Toppings (optional but adds healing):
Sliced scallions or leeks
Toasted sesame seeds
Fermented kimchi or sauerkraut (1 tbsp per bowl)
Fresh cilantro
Squeeze of lime
Directions
Heat sesame oil in a pot. Add garlic + ginger, sauté 1–2 mins until fragrant.
Add broth, seasonings, coconut aminos, vinegar, mushrooms, zucchini, and bring to a simmer. Cook 5–7 mins.
Add bok choy and ramen. Cook noodles per package (usually 4 mins).
Turn off heat. Stir in miso paste (preserves probiotic power).
Top with shredded chicken or a soft-boiled egg. Add toppings to taste.
