Vanilla Overnight Oats

A simple, protein-rich breakfast that supports hormones, digestion, and steady energy.

I was very late to the overnight oats train, but now I get the hype. This is one of my go-to, no-fuss breakfasts when I want something grounding, nourishing, and easy on digestion. It’s lightly sweet, customizable, and keeps me full for hours.

Chill Time: 4 hours to overnight

Ingredients

  • 1/3 cup Purely Elizabeth Vanilla Pecan Oats

  • 1/3 cup Three Trees Vanilla Almond Milk

  • 1 tbsp Ground Chia Seeds (or 1/2 tbsp Whole Chia Seeds)

  • 1½ tbsp Hemp Seeds

  • 1/2 tbsp Maple Syrup (can substitute honey or date syrup)

  • 3 scoops Colostrum or Collagen of choice

Toppings

  • 1/2 Banana, sliced

  • 2 tbsp Almond Butter

Optional Add-Ins

  • Dried Cranberries

  • Fresh Berries

  • Chopped Nuts

  • Diced Apple

Directions

  1. In a jar or bowl, combine oats, almond milk, chia seeds, hemp seeds, and sweetener of choice.

  2. Stir well until fully incorporated, making sure the chia seeds are evenly distributed.

  3. Cover and refrigerate for at least 4 hours or overnight.

  4. Before serving, top with banana slices, almond butter, and any additional toppings you love.

  5. Enjoy chilled, straight from the fridge.

  • Adjust liquid based on your texture preference. Less liquid keeps it thick and creamy; more liquid makes it looser.

  • This recipe provides approximately 20g of protein.

  • For extra protein, add a protein powder or double the hemp seeds.
    (3 tbsp hemp seeds provide ~10g protein.)

  • This is a great option for busy mornings, travel days, or when digestion feels sensitive.
