Ingredients

Roasted Sweet Potato Base:

  • 2 medium Sweet Potatoes, peeled + cubed

  • 2 Tbsp Olive oil or Avocado oil

  • Sea salt, cracked pepper, and a pinch of cinnamon or allspice

  • 1 small Shallot, halved

  • 3–4 cups Beef Bone Broth (or veggie broth)

  • 1/2 cup Coconut milk or Cashew cream (optional for creaminess)

Sage Butter Meatballs:

  • 1 lb ground Turkey or Chicken (lighter for winter comfort)

  • 1 Egg

  • 2 Tbsp Almond flour (or gluten-free breadcrumbs)

  • 1 tsp Sea salt

  • 1 tsp fresh Sage, finely chopped (or ½ tsp dried)

  • 1/2 tsp Garlic powder

  • Optional: pinch Nutmeg for depth

  • 1 Tbsp Ghee or grass-fed Butter for searing

Add-ins:

  • 8 oz three-cheese tortellini (or gluten-free/vegan if needed)

  • 1 handful baby kale or spinach

  • 1 tsp apple cider vinegar (balances sweetness + aids digestion)

  • Fresh sage leaves fried in butter or olive oil for garnish

Directions

  1. Preheat oven to 400°F. Toss sweet potatoes and shallot with oil, salt, pepper, and cinnamon. Roast 25–30 minutes, until caramelized and tender.

  2. Mix turkey, egg, almond flour, sage, salt, and seasonings. Roll into small balls.

  3. Heat ghee in a skillet and sear until golden brown on all sides. Remove and set aside.

  4. Add roasted sweet potatoes + shallot to a blender with 2 cups of broth and coconut milk. Blend until smooth and creamy.

  5. Pour blended soup into a pot. Add remaining broth and bring to a gentle simmer.

  6. Stir in tortellini and cooked meatballs. Simmer 6–8 minutes, until tortellini is tender and meatballs are heated through.

  7. Stir in apple cider vinegar and kale just before serving.

  8. Taste and adjust salt or sweetness if needed.

  9. Top with fried sage leaves and a drizzle of browned butter or olive oil.
