This was one of my first meal-prepping recipes. Can you believe I used never to eat breakfast? Now I can’t function without it!! This is a perfect Holiday breakfast or Family meal prep! It’s delicious, fresh, and delicious as leftovers! This recipe is a cozy, high-protein, and nutritious way to connect with family or have a nutritious way to start your day.

Ingredients

  • 1 Pack of Bacon

  • 16 oz Italian Sausage

  • 12 Eggs

  • 8 oz Mexican Cheese

  • 26 oz Hashbrowns Frozen or Freshly Shredded.

  • 2 handfulls of Fresh Spinach

  • 1 tsp. Salt

  • 1/2 tsp. Black Pepper

  • 1 tsp Garlic Powder

  • 1 tsp Onion Powder or 1/2 tsp Minced Onion

  • 1 Tbsp. Italian Seasoning

Optional swaps or notes:

  • 2 oz of Frozen Spinach

  • Violife is a good dairy-free cheese or 1/4 cup of Nutritional Yeast

  • Feel free to add in Mushrooms, Bell Peppers, or Sun-dried Tomatoes to add to the flavor!

  • For less fat you can use Turkey Bacon, Chicken Sausage, and Sweet Potoatoes.

Directions

Clear, calm, step-by-step instructions.

  1. Preheat your oven to 400°F.

  2. Cook the bacon until crispy, then chop it into bite-sized pieces.

  3. Brown the Italian sausage in a skillet until fully cooked.

  4. In a large mixing bowl, combine the bacon, sausage, hashbrowns, spinach, and half the shredded cheese.

  5. Transfer the mixture into a greased 9x12 glass or ceramic baking dish and spread it out evenly.

  6. In a separate bowl, whisk together the 12 eggs with the seasonings.

  7. Pour the egg mixture evenly over the mixture in the baking dish. Then, sprinkle the remaining cheese on top.

  8. Cover with foil and bake for 45 minutes. Then remove the foil and bake for an additional 10 minutes, or until the center is set and the top is golden.

  9. Let cool for a few minutes, slice, and serve warm. Perfect for meal prep or brunch!

If you use a metal dish, take about 5-10 minutes off the cooking time. This is a great dish for a holiday breakfast or a big family get-together. For your first-time baking, keep an eye on it. Every oven is different and some cook faster than others.
