Breakfast Casserole

This was one of my first meal prepping recipes. Can you believe I used to never eat breakfast? Now I can’t function without it!! This is a perfect Holiday breakfast or Family meal prep! It’s delicious fresh and re-heated.

Prep Time: 30 min    Cook Time: 45 min   Servings: 9-12

Ingredients

1 Pack of Bacon

16 oz Italian Sausage

12 Eggs

8 oz Mexican Cheese

26 oz Hashbrowns Frozen or Freshly Shredded.

2 oz Spinach, Frozen. Or two handfuls of Fresh Spinach.

1 tsp. Salt

1 tsp. Black Pepper

1/2 Tbsp. Italian Seasoning

Directions

  1. Preheat your oven to 400°F.

  2. Cook the bacon until crispy, then chop into bite-sized pieces.

  3. Brown the Italian sausage in a skillet until fully cooked.

  4. In a large mixing bowl, combine the bacon, sausage, hashbrowns, spinach, and half the shredded cheese.

  5. Transfer the mixture into a greased 9x12 glass or ceramic baking dish and spread it out evenly.

  6. In a separate bowl, whisk together the 12 eggs with your preferred seasonings (salt, pepper, garlic powder, etc.).

  7. Pour the egg mixture evenly over the hashbrown and meat mixture in the baking dish. Then, sprinkle the remaining cheese on top.

  8. Cover with foil and bake for 45 minutes. Then remove the foil and bake for an additional 10 minutes, or until the center is set and the top is golden.

  9. Let cool for a few minutes, slice, and serve warm. Perfect for meal prep or brunch!

Notes:

If you use a metal dish, take about 5-10 minutes off the cooking time. This is a great dish for a holiday breakfast or a big family get-together. For your first-time baking, keep an eye on it. Every oven is different and some cook faster than others.
