This recipe came after having my mom’s Buffalo Chicken Dip, but I wanted to make my version with healthy brands. You CAN still have good comfort food and make it healthy!

Ingredients

  • 1 Rotisserie Chicken or 2 Chicken Breasts

  • 8 oz. Softened Cream Cheese (I use Good Culture)

  • 1/2 cup Buffalo Sauce (I use Primal Kitchens)

  • 1 cup of Mexican Cheese

  • 1/2 tsp. Onion Powder

  • 1/2 tsp. Garlic Powder

  • 1/4 tsp. Salt

  • 1/2 tsp. Black Pepper

  • 1 tsp. Parsley

  • 1/4 tsp. Dill

  • Green Onions, to top

  • 1/3 cup Cooked Spinach (Optional)

Directions

Clear, calm, step-by-step instructions.

  1. Preheat oven to 350° F

  2. Chop Chicken to fine pieces (For easy scooping) and set aside.

  3. In a bowl add Spices, Cream Cheese, Buffalo Sauce, and 1/2 cup of Mexican Cheese and mix.

  4. Add in the chopped Chicken, Mix, and put in a baking dish (8x8 or 9x9).

  5. Top with the remainder of Mexican Cheese and bake for 20 mins.

  6. Let cool. Top with Green Onions and serve with your favorite snacks! Enjoy!

Storage & Prep Tips

  • Store in an airtight container for up to 5 days

  • Serve as a dip with your choice of Tortilla Chips, Pita Chips, Cucumbers, Bell Peppers, etc. Topping with Parsley, Green Onions, and Feta will all pair well with this.

  • Want this is as a Crockpot meal? Easy! Add all ingredients to a Crockpot, put on med-high until everything is easily combined then leave on low-warm to serve.
