3 Tbsp water
½ Tbsp tomato paste
2 - 4 cups lettuce of choice, chopped
1 cup diced tomatoes
1 cup diced cucumber
½ cup shredded cheese of choice
¼ - ½ cup diced onion of choice
1 Tbsp avocado oil (if roasting sweet potatoes)

Fresh cilantro
Lime wedges
Salsa
Greek yogurt or sour cream
Optional swaps or notes:
Ground turkey, bison, or chicken can be substituted for beef.
For dairy-free, omit cheese or use a dairy-free alternative.

Directions
Preheat oven to 400°F if roasting sweet potatoes.
Toss cubed sweet potatoes with avocado oil and spread evenly on a baking sheet. Roast for 20-25 minutes, flipping halfway through, until tender and lightly browned. Alternatively, boil until fork tender.
While the sweet potatoes cook, heat a large skillet over medium heat.
Add diced onion and sauté for 2-3 minutes until softened.
Add ground beef and cook until approximately halfway browned.
Stir in the taco seasoning, tomato paste, and water. Continue cooking until beef is fully cooked and the sauce has evenly coated the meat.
Assemble bowls with lettuce as the base. Top with sweet potatoes, seasoned beef, tomatoes, cucumber, cheese, and any additional toppings desired.
Serve immediately and enjoy.
